Start the Day Right

I found a recipe on Pinterest and my new favorite food seems to be sweet potatoes lately, besides onions! But this recipe has both. Win win. I’ve decided to alter this for a single serving for my breakfast. It’s so exciting. I don’t have sausage so I’m just doing without, but I do plan on making it with sausage because I love eating it 🙂 Remember that eating breakfast is the most important meal of the day. It sets the pace for the day, levels your blood sugar, gets your metabolism burning, and really helps with controlling your cravings. Your body just fasted through the night so breakfast is IMPORTANT.

I used a small sweet potato and peeled it. It’s a good source of fiber, Vitamin B6, C, A, and potassium. It is very high in anti-inflammatory agents (inflammation produces health problems). One potato can have 4 grams of protein and 7 grams of fiber! Plus is has a glycemic index of 17 (the scale is up to 100 which is pure sugar). That is fantastic for your start to the day!
Onion is only a 5 on the glycemic index scale, strongly anti-inflammatory, and has a whole list of vitamins and minerals contained in it such as potassium, Vitamin B6, folate, and manganese. It’s excellent for weight loss as well. 
We all know eggs are a great source of healthy protein and fat. It’s also a good source of riboflavin, Vitamin B12, and phosphorus. It is more inflammatory but it’s ok because you have a good balance of anti-inflammatory foods. The glycemic load is only 2 for this. 
It is a fantastic meal to balance your blood sugar, have a good source of fiber, protein, and variety of vitamins and minerals. Don’t you love eating healthy?!

Sweet Potato Hash One Serving

1 sweet potato
1/4 onion
1 tbsp butter or olive oil
1-2 eggs (I used one)
sausage (optional)
thyme
salt
pepper

Directions:
1. Get pan warm, medium to high heat with oil or butter.
2. Cut sweet potato and put in pan. Stir regularly (cook 1-2 ounces of sausage in other pan, optional)
3. Once they’re cooked well enough, add onion, thyme, salt, pepper (all to taste), and cook a few minutes longer.
4. Scramble one or two eggs and add to cooked potatoes and onion (add cooked sausage with eggs).
5. Once cooked, put on your plate and EAT. Serve with fruit
