Well, I found it! So excited to share with you. It is moist, tasty, but grain free and no refined sugar. It&#8217;s also super easy to make. No mixer needed. Enjoy!&nbsp;<\/p>\n<p><b>Paleo Blueberry Muffins<\/b>&nbsp;(makes 9)<\/p>\n<p>2 cups Blanched almond flour<\/p>\n<p>2 eggs<\/p>\n<p>1\/4 cup honey or maple syrup (I did half of both)&nbsp;<\/p>\n<p>1\/2 tsp baking soda<\/p>\n<p>1 1\/2 tbsp apple cider vinegar<\/p>\n<p>1\/2 tsp salt<\/p>\n<p>1 tbsp pure vanilla extract<\/p>\n<p>2 tbsp olive oil<\/p>\n<p>1 cup blueberries&nbsp;<\/p>\n<p>Preheat oven to 350 degrees. Add all ingredients except blueberries into a large bowl. Mix together until combined and thickened. Scoop into muffin tins. Fold in blueberries.
