But this recipe has both. Win win. I&#8217;ve decided to alter this for a single serving for my breakfast. It&#8217;s so exciting. I don&#8217;t have sausage so I&#8217;m just doing without, but I do plan on making it with sausage because I love eating it \ud83d\ude42 Remember that eating breakfast is the most important meal of the day. It sets the pace for the day, levels your blood sugar, gets your metabolism burning, and really helps with controlling your cravings. Your body just fasted through the night so breakfast is IMPORTANT.<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"http:\/\/3.bp.blogspot.com\/-gEgyTxOrHow\/URKlpZuIbNI\/AAAAAAAAALs\/_5RRar1P3iU\/s1600\/IMG_2969.JPG\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/fitsteph.com\/wp-content\/uploads\/2013\/02\/IMG_2969.jpg\" width=\"320\" \/><\/a><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\nI used a small sweet potato and peeled it. It&#8217;s a good source of fiber, Vitamin B6, C, A, and potassium. It is very high in anti-inflammatory agents (inflammation produces health problems). One potato can have 4 grams of protein and 7 grams of fiber! Plus is has a glycemic index of 17 (the scale is up to 100 which is pure sugar). It&#8217;s also a good source of riboflavin, Vitamin B12, and phosphorus. It is more inflammatory but it&#8217;s ok because you have a good balance of anti-inflammatory foods. Get pan warm, medium to high heat with oil or butter.<br \/>\n2. Cut sweet potato and put in pan. Stir regularly (cook 1-2 ounces of sausage in other pan, optional)<br \/>\n3. Once they&#8217;re cooked well enough, add onion, thyme, salt, pepper (all to taste), and cook a few minutes longer.<br \/>\n4. Scramble one or two eggs and add to cooked potatoes and onion (add cooked sausage with eggs).<br \/>\n5. Once cooked, put on your plate and EAT.
